Yields eight servings
This recipe is gluten-free, dairy-free and vegan.
6 medium (2 lbs) sweet potatoes or yams, peeled and cut into 1/2-inch cubes
11/2 cups organic applesauce
1/3 cup maple syrup
2 Tbsp coconut oil
1 tsp ground cinnamon
Place sweet potatoes in a 2-to-3½-quart slow cooker.
Mix applesauce, maple syrup, coconut oil and cinnamon together and spoon over potatoes.
Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.
Sprinkle with organic brown sugar and nuts in amount desired (optional) and enjoy.
Easy Pumpkin Pie
2 cups organic canned real pumpkin (not pumpkin filling)
1/2 cup honey
4 egg whites
1/4 tsp sea salt
11/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
11/2 cups almond milk (or milk of choice)
1 readymade graham cracker crust
Combine all ingredients in bowl and mix well.
Pour in crust and bake for 15 minutes at 425 F and then reduce to 350 F for 45 minutes uncovered.
